Mac and Cheese
Introduction
A one-pot Mac and Cheese ready in under 30 minutes! Great for the weekdays when you need something quick, tasty and leaves minimal cleaning after. Â This healthier version of macaroni and cheese is better than the made in a box version and can convene even a vegetarian lifestyle.
The recipe can be easily divided into individual and frozen portions of stress-free lunches. I like to separate in the single portions for my fridge so I can heat them and put them in a Thermos for the lunch of my kids. For a full meal, this pasta dish works well next to a salad, crudité or vegetable soup.

Ingredients
- 750 g pasta
- 400g cheddar cheese (less than 20%MF)
- 1 can evaporated milk
- 2 x 900ml bouillon no salt added
Steps
Step 1 : Boil the bouillon with evaporated milk (approx 10 minutes)
Step 2: Add the pasta and stir making sure no pasta is stuck at the bottom. Let cook for 10 minutes
Step 3: Remove from the heat, add the grated cheese. Mix well making sure that all the cheese is well distributed and melted
Step 4: Let sit for at least 10 minutes. For best results, mix off the heat occasionally and let sit for 30 minutes
