Bok choy stew
Introduction
This is a great all-in-one recipe! An easy dish that you can make in a big pot and that can satisfy everyone. This dish is also very versatile and it can be changed with any other ingredients that you prefer. I first threw this recipe together and hectic Friday night after returning home with the kids and was limited to the food in my fridge (some that needed to be saved) and it turned out great.
Since then, it has been a one-pot wonder that changes based on ingredients on hand. Feel free to add chicken or beef cubes for those days you wish to add meat or keep it vegetarian or vegan with plant-based options of protein like lentils, kidney beans or chickpeas (or all 3). Truly there are no limits to how you change this recipe and make it your own.

Ingredients
- 1.7 kg potatoes, diced 2-inch cubes, skin on
- 454g carrots, chopped, 1 inch (comparable size to potatoes)
- 680g bok choy, thinly sliced
- 3 medium onions, diced
- 2 medium-large tomatoes, diced
- 1 cup lentils, dry
- 15 ml avocado oil
- 2x 900ml broth, no salt added or low sodium
- 1 tbsp turmeric
- 2tbsp paprika
- 1 tbsp oregano
- ½ tsp garlic powder
- 2 tsp salt
- ¼ tsp pepper
- ¼ tsp cumin
- 2 bunch green onions, chopped thinly
- Coriander, chopped
Steps
Step 1: Heat pan with avocado oil. Add the onions and carrots. Cook until almost tender.
Step 2: Add potatoes, tomatoes, lentils and broth. Let simmer for 30 minutes.
Step 3: Add the bok choy, mix and let simmer for 30 minutes.
Step 4: Serve and top with green onions and coriander.
