Chocolate Mousse

Introduction

Every so often, it’s nice to have an easy dessert. Healthy habits include all kinds of foods even the sweet stuff. This recipe is a healthier version of a traditional recipe which only had cream and chocolate as the main ingredients. Instead, I have substituted part of the cream for low-fat Greek yogurt and swapped the chocolate for cocoa. I also replace part of the sugar for stevia which further improve this recipe. Note that I tried to use 15% cream instead of 35%, which did not give the right texture.

I also use gelatin in place of eggs, to give a creamy consistency and to set the mousse. It is important to use premium cocoa for the texture and flavour to well replace the chocolate. Yes, this is a dessert but I think a much-improved version which doesn’t compromise on flavour!

Steps

Step 1 :

Whip the cream until it forms soft peaks. Leave in the fridge while preparing the rest of the recipe.

 

Step 2 :

Combine in a separate bowl the greek yogurt, milk, sugar and the stevia and cocoa until completely homogenized.

 

Step 3 :

Prepare the gelatin as indicated on the package. Add to the chocolate mixture and mix well.

 

Step 4:

Slowly fold the chocolate mixture and gelatin mixture in the whipped cream until well distributed. Hint: The colour should be uniform throughout if you are using a glass bowl.

 

Step 5:

Serve into separate portions and let set covered with plastic wrap for 8hr to allow the gelatin the firm up the mousse.
