Recipe: Lentil soup

 

 Step 1: Cook the vegetables until tender

  • Frozen vegetables, spaghetti mix, 750g (1 pack of 750g)
  • Avocado oil, 2 tbsp (30ml)

 

Step 2: Add the lentils and the broth

  • Lentils, 1 cup(250ml)*
  • Chicken stock, no salt added, 3L

 

*The lentils can be replaced by homemade ravioli (recipe to come)

 

Step 3: Add the spices

  • Tumeric, 2 tbsp (30ml)
  • Paprika, 3 tbsp (45ml)
  • Hungarian paprika (optional), 2 tbsp (30ml)
  • Basil, sec, 1 tbsp(15ml)
  • Salt and pepper to taste

Step 4: Mix the water and cornstarch to thicken the soup

  • Cornstarch, 3 tbsp (45ml)
  • Water, 3 tbsp (45ml)

Step 5: Let simmer until the lentils are fully cooked (approximately 1hr)
